1 x Skirt steak approximately 800g
1 x Extra virgin olive oil

The skirt steak is the diaphragm muscle and can come from the two places the inside and the outside. I always ask my butcher for the outside which is larger and thicker than the inside piece. Now this steak has texture, it’s not like eating a sirloin or scotch steak but has amazing flavour but you will have to use your teeth. If you can’t get your hands on the skirt ask for hanger, flank or flat iron steaks. The skirt is awesome in tacos and stir frys.
Have your meat out a room temperature for 1 hour, cheekily rub in the oil and season liberally with SS Texan. Let sit for 5 minutes.
Heat your BBQ to hot, add your steak to the bbq and cook on each side for 4-6 minutes, 8-10 minutes in total or until the internal temperature is 54c, let rest for 5-10 minutes covered in a warm place. Carve and some salt and enjoy.
