
Butter Chicken Ribs with Street BBQ Indian

Ingredients:
- 400g chicken ribs
- 1 Street BBQ Indian seasoning
- Olive oil (extra virgin preferred)
- 1 red onion, thinly sliced
- 1 tablespoon grated garlic
- 1 tablespoon grated ginger
- 2 tablespoons Street BBQ Indian seasoning (for gravy)
- 4 tablespoons tomato paste
- 1 cup cream
- 1 tablespoon malt vinegar
- ½ bunch coriander, chopped
Instructions
Step 1: Prepare the Chicken Ribs
1. Drizzle chicken ribs with olive oil.
2. Liberally season the ribs with Street BBQ Indian seasoning.
3. Mix thoroughly to coat the chicken evenly. Let the chicken sit while you prepare the butter gravy.
Step 2: Make the Butter Gravy
1. Heat ½ cup olive oil in a heavy pan or pot over medium heat.
2. Add the sliced red onion, grated garlic, grated ginger, and 2 tablespoons of Street BBQ Indian seasoning.
3. Sauté the mixture, stirring frequently, for 10–15 minutes, until the onions soften and become fragrant.
4. Stir in the tomato paste and cook for 3 minutes, stirring continuously.
5. Pour in the cream and malt vinegar, bring to a gentle simmer, and cook for 5 minutes. Remove from heat and set aside.
Step 3: Grill the Chicken Ribs
1. Heat your grill to medium-high.
2. Grill the chicken ribs for 4–5 minutes on each side or until fully cooked and slightly charred.
Step 4: Assemble and Serve
1. Place the grilled chicken ribs in a serving bowl or plate.
2. Generously pour the prepared butter gravy over the chicken.
3. Garnish with chopped coriander and serve immediately.
